Shrimp Shakshuka? Shrimp, jalapeno, mushrooms, sliced black olives, canned diced tomatoes and riced cauliflower sauteed in butter with a clove of fresh garlic. Feta cheese. Pictured here is enough for two servings. Per serving: 300 calories, 8 net carbs, 16 grams of fat, 30 grams of protein. I have half of this left over.

Black Olives: When free radicals oxidize cholesterol, blood vessels are damaged and fat builds up in arteries, possibly leading to a heart attack. The antioxidant nutrients in black olives impede this oxidation of cholesterol, thereby helping to prevent heart disease. Olives do contain fat, but it's the healthy monounsaturated kind, which has been found to shrink the risk of atherosclerosis and increase good cholesterol.

Nope. This is too freaking easy to mess up. See those ingredients in the skillet in the second photo. Turn on the gas, let it cook down, make a well, add eggs, cook either open skillet or covered (I covered to poach). Toss some feta on top. Eat.

LOL Chris - not all canned, I had to thaw out the frozen shrimp, LOLOL And chop the pepper and mushrooms. There was some cooking involved but, yeah, not much.

Oh, the cauliflower was frozen. I had to open the bag and measure. Sigh (tossing flour in my face like on the commercial)

Oh.. shoot.. I was about to add 'I had to smash and slice garlic clove' and I just NOW remembered I finally broke down & bought a garlic press several months ago. Dangit.

Well, the egg & shrimp was the major calories at 90+80 then the feta at 35, black olives and butter 25 each, the rest of the veggies around 40.
