Ahhh... is that some southern comfort from the roots of the bayou?!? My brother lives in La and is a chef off shore on the drilling rigs/plateforms! He feeds the folks well that drill for oil in the Gulf! These folks don’t see their families for weeks and sometimes a couple months at a time being out there! Anyways, you meal looks great!!! 😃

Todd, yes, this is a variation of my crawfish etouffée recipe. Crawfish season is over and I was hungry for etouffée, so I decided to try this. Came out quite good, though not as pretty, as crawfish gives the sauce a nice reddish color.

Debbie, etouffée means "smothered," so smothered crawfish; and, of course , we serve everything over rice. 😁

Todd, we used to tie up to the rigs offshore to fish for red snapper, and the men on the platforms were always so glad to see us. They would invite us up, but we never went, though we'd visit with them from the boat. Those were some fantastic days!
