Papa a la huancaina is one of those deceptively simple dishes :)

Papa Rellena is kinda like Arancini but with potato as the outer instead of rice. The yellow potato is dry & crumbly so it’s quite maleable.
Papa a la huancaina is cooked potato slices with Huancaina sauce (cheese & chili), some olives, folded into a leaf of iceberg lettuce.
