Kat, there is a catfish farm just a few miles from here, so the fish I buy is very fresh. Growing up in Louisiana we always ate wild catfish.

Catfish is my favorite freshwater fish!
Always had it fried, but this is the crispiest looking oven baked one I've ever seen... I'd give that a whirl for sure!

Kat, if it was mushy it was not fresh. Catfish is firm and flaky when it's cooked.

Buttons, I season it lightly (Tonyy Chachere's), rub it with yellow mustard (about 1 tsp on each side of this filet), then shake it in a bag with Fish Fry. Put it in a pan lightly sprayed with Pam, spray it lightly with Pam and bake it at 400°F for 20-30 minutes depending on the size. The thickest part should be flaky when pierced with a fork.
