Hi Wayne, it is chicken breast and gizzards. I coat the chicken lightly with flour, flaxseed meal, and seasoning. 😁

The heart is cut up and in there as well... I don't like the liver though. I cook the legs, wings and neck differently than the breast meat, gizzard and heart. The gizzard is chewy!
