Mmmm. I have been thinking about egg salad too. I actually bought some light mayo with that in mind about two weeks ago. Then I decided before I buy eggs I needed to use the carton of egg whites first. Working on that consumption but also decided I have way too much protein in the freezer that needs to be eaten before I buy more protein. So there you go….
