Waffle, I roasted the cauliflower, broccoli and chickpeas for 20 minutes at 400°. That stuff was tossed with paprika, garlic powder and olive oil. The tahini dressing was a little bit of dill, salt to taste, 2 cloves garlic, 4 tbsps tahini, juice from one lemon, and 3 tbsp nutritional yeast, with a little water to get the right consistency. 1 cup of cooked quinoa. And I just mixed it all together and added a (separately roasted) sweet potato at the end. Heaven. 4r

Waffle, 💙 It took me a while to find the nutritional yeast. I am sure it is optional, but that stuff is seriously good for you. Between nutritional yeast, beans, and tofu I am eating less meat...and I have (almost 😅) eliminated rice with sweet potato and spaghetti squash. I had the left over green beans from a previous dinner. The original recipe also included pistachios but I did not have the calorie budget for those, so I just omitted them.
