Kat, I love cauliflower in all its forms, but I grew up eating "rice & gravy" every day, and when I eat Cajun food, caulirice just doesn't work for me. Believe me, I have tried.

Kat, I have sometimes done that and it does work. BUT, crawfish etouffée is food for the gods, not to be tampered with, so...Hahaha!
