last night we had Sorfritas Seasoned Tofu for dinner over a bed of Tossed Green Salad and Black Bean and Corn Salsa. It tasted pretty good. I have been trying to work more vegetable protein into my diet. Any thoughts about Tofu?

I eat plant based, so use tofu from time to time. I think it is a healthy food, though some might disagree due to the way it is processed. It is so versatile according to how it is seasoned, and very high in protein.

My oldest stepdaughter is vegetarian an she often fixes tofu when we visit. Honestly not much taste unless you season it pretty good. She likes spicy/hot so that's how she does it and it's good. But give me a preference and I'll stick with meat or fish. :)

Meh...I used to use tofu twice a week - but I am not tolerant of soy anymore. I agree with Jim, these days - poultry, meat or fish seem to give better quality protein.

My goal is to supplement or add another choice to chicken and fish. I do eat meat but sparingly...

You can also try tempeh which is another soy product. It has more fiber and it's firm and chewy. You might be able to find it along with tofu in the supermarket. It's pretty good.

Chipolote is where I discovered Sorfritas. We used the copycat recipe, found below... http://www.chefdehome.com/Recipes/429/chipotle-sofritas-chipotle-mexican-grill-s-braised-sofritas-copycat Thanks Arochom. I have heard of Tempeh. I need to do a little taste testing and research...

Tofu is an incredibly versatile food..link below which is like tofu primer..with marination tofu can become very good...I like it just plain..but there are so many uses for it...most people sort of need to work up enthusiasm for it... ..my husband uses it to make vegan ice cream for me..to die for..be glad to get you the recipe if you want it..we have an ice cream maker too..cheapo one from Amazon..recipe has soy yogurt, tofu, dark chocolate unsweetened, sugar free jelly...and sweetener... Chocolate tofu mousse below...killer and vegan and simple 1 (12 1/3 ounce) package silken tofu (Mori-Nu Firm or Extra-Firm) 3⁄4 cup almond milk 1 cup chocolate chips 1 teaspoon vanilla extract Directions Place almond milk and chocolate chips in a microwave-safe bowl and heat about 1 minute depending on your microwave. Stir together until chocolate chips are dissolving in milk, you should now have a rich chocolate milk. If necessary, heat a bit a longer. Let the mixutre cool for a few minutes. Add chocolate mixture, tofu, and vanilla to a food processor or blender and process until pureed. This is important: taste the mixture to make sure you don't a have a tofu taste since all brands are different. If it's not chocolaty enough you can melt some more chocolate chips and add it but don't add any more milk or it won't set properly. Pour into 4-5 ramekins or small dishes. It will set better this way than if it's in one big bowl. Chill 2-3 hours and it's ready to eat! http://www.seriouseats.com/2014/02/vegan-experience-crispy-tofu-worth-eating-recipe.html simple recipe below for tofu as a dessert 1 package (12.3 ounces) lite firm or extra firm silken tofu (Mori-Nu) 1/3 cup maple syrup or sweetener of choice 3 tablespoons fresh lime juice zest of 1 lime Blend tofu, maple syrup, lime juice and zest in a food processor until very smooth. Keep scraping down the sides of the processor to blend completely. Refrigerate until chilled. - See more at: http://planeat.tv/ann-lime#sthash.8RAuI9Lc.dpuf Best, Dianne Gardner
