Thank you Enr4, Moopie, Keyten, Hangry, KC, D.M., Pixie, Dhat, Debra, Osoma and JC. These are so easy to make it's ridiculous. The hard part is heating up the oven for only two but I'd already decided that was what I wanted. I made six last time and they were just as good cold for leftover lunches. For Keto's it's the perfect blend of fat & protein as just eating one for me is filling and satisfying for hours. I've posted these before with brisket and rotisserie chicken. Still delicious. OH, and I used the color saturation filter on my phone ... so yeah, this was an improvement over some past photos.Thank you for noticing. And Keyten, I guess that's where I read the info on the peppers - your journal. I went back through mine and didn't see repeats. Oh well, even if we do, we have different people who glance now and then so it can't hurt. Plus, I need to read things more than once myself, LOL

Oh I want one soooooo bad! LOVE JALAPEÑOS!! Have to tell you about my experience last weekend. We have this thing here called Rib Fest, it travels Canada wide and has some vendors from Texas, the Carolinas etc., Serving up some of the best ribs and chicken I ever ate, cornbread, beans, slaw, you name it, all the deliciousness I dream of! I was asking everyone if their name was Bells...didn’t find you...where were you hiding????? HAHA!!! Well after my feast, on walking around, after having Ferrero Rocher cheesecake on a stick (BEST CHEESECAKE I EVER EVER HAD!!)And that’s local...not good I found out about this place...anyyyyywaaaaay... I stopped at this table selling a million different kinds of hot sauce. We love hot sauce, hotter the better. UNTIL!!!!!!!!!! I tried their hottest sample and as I barely dipped my pretzel stick in and ate it, IMMEDIATELY, faster than you can blink, I started to hiccup...one after the other, my right ear started to PAIN and I started to run, back to the car for water!!!!!!!!! No relief! My daughter had left some of her ice cream chimney in the car, all melted in its holder but I drank that seeking help. Almost called 911. NOT JOKING!!!! Never ever in my life had I experienced this reaction. Googled it after I got home, hours later, throat and ear still in agony...the hiccups are a thing!!!! The diaphragm goes into a shocking spasm, thus the hiccups. Now I’m so terrified, I’m almost afraid of black pepper! 😦

Wifey - OMG!! What an experience!! No, I wasn't in Canada - so haha you didn't miss me. That traveling rib fest sounds amazing though! And.. are you kidding me?? Cheesecake on a STICK?? I'd have to pray that place wasn't on a frequently traveled street for me! That reaction to the hot sauce.. did you find out what it was (which sauce?). I like spicy but I do NOT like anything so hot that it gives me pain or anything like that. I bet you even lost your breath for a bit! The melted ice cream was likely the best remedy - it helps soak that oil off your tongue (absorb it, something scientific I'm not going to try to explain). I don't think you should be terrified of simple pepper. My thought is that sauce was 'ghost' pepper and that stuff IS strong. I bought some GP seasoning recently and just a sprinkle made the food unpleasant for me. HEY, maybe that's a new weight loss plan??

Oh - and an experience with peppers - I worked/lived in Albuquerque many years and that's probably not relevant as it can't be the only place but people out there had CONTESTS on eating hot peppers and not losing their mind. They'd have SWEAT rolling down their face saying, "Oh, I'm good". I finally learned that it is actually addictive. That it releases some endorphin and people get high from it. I'm not going to try that. But it was interesting to learn it. Now, as for "my" peppers in this photo - I clean the seeds & pulp before stuffing. So it's much like eating a bell pepper. Not hot at all. I prefer to taste the food in my mouth.

Oh Bells!! I know the scientific remedy is dairy, my daughter is studying to be a scientist so she tells me all she knows. She wasn’t too happy I gonna she’d her treat but hey, she’s 20, and mature enough to understand. She guards her ice cream with her life, her fav treat, if she was 5, we’d deal with a meltdown!! LOL!! The sauce was made in Kansas, and was called Da Bomb-Beyond Insanity!!! Caution on the bottle to children. Knew I shoulda waited til I grew up to try it! Heehee!! Habanero peppers and smoky chipotle peppers and something something...deadly!!!! Seriously. Of course my fear of black pepper was a joke!! But no joke, I was feeling sick. My ear has been irritating me ever since. And yes...on a stick. My dear, they are going to be my go too no doubt, and not on my regular route, really out of my way, thank God!! That’s a lifesaver!! Cheese 🍰 hmmmmmm
