My dad used to make thick patties of leftover mashed potatoes and heat them through in a buttered covered skillet 🍳. Then he'd crack an egg on top of each, put lid back on until they were set (sunny side up). Break yolk when eating. So bad but sooo good! I haven't thought about that in years.
