Woke at 214.8, up 2.2 from yesterday. Too many hors d'oeuvres at the AFFIRM banquet last night and more fruit than I should have had. Today is a 5:2 fasting day. But don't have enough calories left in the month to do my 2100 per day on off days. May not be able to make my average calorie target after vacation, but will do my best! UPDATE: Came home after a doctor appointment and did my six miles on the treadmill. Got a 212.6 weigh in afterward. Still up a good ten pounds of water. Should begin to drop that this week. Took a head of cauliflower and “riced it up" in a blender. Cooked it with soy sauce and some coconut oil shortening. Was very passable as fried rice. Will investigate doing more things like this.

PS. I use the Caul-Rice as a base for spaghetti sauce, too, sometimes. It's good, isn't it? :o)

@Draglist and @Mom2Boxers Have either of you tried Spaghetti Squash as a replacement for pasta?

Me too. I miss Italian bread soaked in olive oil more than pasta.

I love Spaghetti Squash, Scalewatcher!! I planted ONE plant in my garden this year to see how many I would get. Thanks for your ideas ... got any for butternut squash? I have a bunch growing from seed now. LOL!

Doesn't soy sauce have a lot of salt? Although it is yummy.

@Mom2Boxers No, I can't think of anything right this minute for butternut squash. I like butternut squash, but no one else here does, so I don't fix it very often. I do fix a lot of yellow squash cooked in bacon grease, butter, and onions for my very gentlemen southern husband. I like acorn squash, but no one else does. What's wrong with these people?! :D
