Lean beef "salami" I made for a gathering of young adults at my house this weekend. It is super high in protein but salty off the charts! :) My mom used to make this stuff out of whatever ground meat we had... elk, moose, venison. The only kind I couldn't stomach was the bear salami she made once. Yuck! It was so horrible that even the strong smokey, garlicky, and peppery flavor could not make it good. I haven't made it for ages, so only my 25 year old remembered having some. She took one bite and she remembered! I used to put it in their sandwiches when they were little. No one is a huge fan, so I am not sure I will make it again. I liked it with crackers! Hubby wants me to make it again but modify the recipe using more garlic, red pepper instead of black, and less curing salt. We will see.

Looks pretty good to me. Reading Lewis & Clarke's journals. they ate a fair share of bear meat. Sometimes they'd shoot a bear, render it down for its fat which they put off in kegs and discarded the meat. Later they'd make a porridge of corn meal and bear grease. I'd have to be powerful hungry to eat that.

That is awesome, Nancy! Gastropod, we only had a bear once. I remember a lady we shared it with took all the white, clean fat and rendered it down into lard. Honestly, she made the best pie crusts ever from it! There was no bad flavor at all that I can remember. But I remember hating the meat. I think I was about 14 when we had bear. My favorite wild meat was moose. We didn't hunt, but we were given a lot of meat. I agree that it would take a lot for me to want to eat bear lard porridge! Sk, I've got a couple pounds worth. Too much! 😂 I don't remember it being so darn salty. You are welcome to have as much as you like! 😁 But, you'd have to like it! 😁

I don't take pictures of food I make very often, sk. It usually isn't very pretty! :) I did make a huge pot of zuppa toscana style soup. A massive stock pot full! I used two of the biggest bunches of kale I have ever seen! It was pretty good and it got gobbled up quickly. :)

That all looks good ... Lewis & Clarke eh - other than fat from fish - there is very little fat available in the - so called wilderness - most wild game is very lean - so having no fats in the diet while wandering around over mountain passes - makes you eat corn meal and bear grease .... YUCK.

Bear meat?!? Hmmm, I'm all about other meats, but bear would make me think twice ..I do love elk though! My husband makes him a own jerky out of whatever "wild" meats we have in freezer. His peppered jerky is the 💥

Thank you, sk! Maybe I will post more often! 😁 I'm just a little intimidated by some awfully amazing cooking displays! Mr and Mrs sk are quite the standard! Erika and AdaOke. I really don't know how real salami is made, but this is very simple. It is spices, curing salt, liquid smoke and lots of time being cooked at a very low heat on a broiler pan. My oldest loves it. And my hubby chopped up some to go in a dish he made with rice and eggs and carrots... And spices. Odd combo, but he liked it. 😁

Diana, I bet the elk jerky is amazing!! I remember moose tasted more like lean beef (to me) and elk was closer to venison (to me). But, it has been a long time since I've had any of it. 😁 J123, I bet it was rough not having much fat available... Nasty bear fat or not, it was surely needed I guess. 🤮

Homemade salami sounds interesting. I've eaten lots of game, as my ex has always been a hunter (I fished, never cared much for shooting creatures). Never had bear, though I have had alligator and rattlesnake. My least favorite was mule deer, the meat was very tallowy, coated my mouth, ugh.
