I would love to try this but just the word "soy" kind of turns me off. What is soy protein isolate anyway and where can I buy it. I don't want to buy a whole jar of it as I may not even like it. I can eat butter, oil, sour cream and ricotta cheese on the Atkins diet and I'd love to try this for a breakfast as I'm tired of the same old thing every morning.

have not tried these yet but 4 grams of protein powder is about 2 teaspoons. I am going to substitute vegan protein shake Orgain brand

I believe in being aware of what we are eating here. This recipe sounds interesting…and also not too difficult. Perhaps substitute "sweetener" with actual LESS sugar or a little honey…because I am not believer in sweeteners…ENJOY

I thought the blintz was very, very good! I did not use the protein mix and it still worked great. Thought the filling was a little sweet so will use only a portion of a Spenda next time. Really yummy.

Delicious! I used stevia instead of splenda, added lemon zest to the filling, and used ancient grains protein powder instead of soy. These are a breakfast life saver!!

I will give this 3 stars because of the nutrional value. I was able to reduce the calories by cutting the olive oil and protein powder but it could've used a little salt.

Added 1/2 teaspoon splenda,1/2 teaspoon vanilla extract & a dash of cinnamon to my batter since I only had unflavored protein powder. I used a small 5-6 inch skillet and got 2 blintz. These were very good and I will make again. VERY easy to make.
